Kanda Poha or Kandha Poha is a favourite in Maharashtra and a much loved meal that can be had anytime of the day.
It consists of Lemon yellow coloured rice flakes that are soft in texture with a predominant flavour of mustard seeds and served with a garnish of grated coconut and roughly chopped coriander leaves.
Here what you'll need?
1kg Poha
100ml Oil
100gms Raw Peanuts
100gms Potato
200gms Onion (chopped)
50gms Green Chilli (chopped)
15gms Coriander (chopped)
10gms Mustard Seeds (chopped)
2gms Asafoetida
1-2nos Curry Leaves
5gms Turmeric Powder
5gms Sugar
10ml Lime Juice
Fresh coconut for garnish (optional)
Salt to taste
Cooking Method
1. Wash and rinse poha with water. Drain all the water and keep it aside for 5-10 mins.
2. Add salt, turmeric powder and sugar to washed poha. Mix everything with your hands until evenly coated.
3. In a kadai heat oil. Add mustard seeds, when they crackle, add chopped green chillies, curry leaves and then add asafoetida.
4. Add chopped onion and sauté for 2-3 mins. Add green peas. Cover the kadai and let it cook for 2-3mins.
5. Add soaked poha and stir well. Cover the kadai and let it cook for 4-5mins.
6. Mix lemon juice, add sugar, salt if needed. Garnish with coriander leaves and fresh grated coconut. Serve hot.
Special Tips
Sometimes after washing raw poha, poha does not soak water properly, that time sprinkle little water on them.
